BUTTER
“Yellow like buttercups, has a faint taste of hazelnuts, and is rich in Vitamin A….” qualities which have been noted by the Appellation d’Origine Controle specification, which has been in place since 1986.
The quality of Isigny butter reflects all the natural advantages of cows feeding on grass rich in iodine, beta carotene, and trace elements : it is impossible to confuse it with any other butter. It is yellow like buttercups, it has a faint taste of hazelnuts and it is rich in vitamin A. All these qualities were noted in the Appellation d'Origine Controle specification, which has been in force since 1986.
CREAM
With it’s homogenous texture and liquid consistency, Isigny Saint-Mere UHT cream can be used in many recipes. In cooking it reduces well, and also resists curdling when subjected to acid or alcohol. For patisserie, its excellent expansion ratios and subtle flavors are ideal for making a good Crème Chantilly.
